In this recipe e suggest the use of avocado as a creamy.
The lime contributes a touch of acidity which contrasts with
aroma of the pineapple and the balsamic hint of the tarragon leaves.
Ingredients:
2 avocados
100g sugar
1 lime(peel and juice)
1/2 pineapple
tarragon leaves
Preparation:
Peel and mash the avocados.
Add the sugar,grated lime peel an it's juice.Mix and mash
until you get a very fine emulsion.
Cut the pineapple in small cubes.
In a bowl or a soup plate,put some guacomole alternating
whit bits of pineapple and tarragon leaves.
The fresh tarragon leaves bring an intense
flavor to the dish with an anise-y slightly spicy touch.
