Mozzarella in carrozza is a type of fried cheese sandwich in
Italian cuisine and Southern Italian cuisine. It is prepared by frying
mozzarella cheese that is within slices of bread. It is a popular dish in the
Campania region of Southern Italy and in areas of New York City.
Ingredients:
6 slices white bread (crusts removed)
1 ball (approx. 125g) mozzarella (cut into approx ½cm /
one-eighth inch slices then strips)
125 millilitres full fat milk
3 heaped tablespoons plain flour
1 large egg
salt
pepper
olive oil (not extra virgin) for frying
Preparation:
Make sandwiches out of the bread and mozzarella, leaving a
little margin around the edges unfilled with cheese, and press the edges
together with your fingers to help seal. (One of the advantages of plastic
bread is that it is easily wodged together.)
Pour the milk into one soup bowl, the flour into another,
and beat the egg with salt and pepper in another.
Warm the oil in a frying pan over a medium heat.
Dunk the sandwiches briefly, one by one, in the milk, then
dredge in the flour, then dip in the beaten egg. Fry in hot oil on each side
till crisp and gold and remove to kitchen towel. Cut in half and apply to face.
